My first recipe on mydish - dedicated to my senior taster (and husband) Ben x.

Boil potatoes until just cooked. Cover lentils with water and boil for 20 mins. Grind spices in pestle and mortar.
Fry onion and green pepper in olive oil until starting to brown.
Add spices and fry for 2 mins. Add tomatoes and cook until softened. Add lentils, potatoes, ground almonds and water to loosen and cook for a further 5 mins.
Serve with freshly chopped coriander on top.
Chef's Tips
I like to serve this with onion bhaji's, mango chutney, raitha and no rice.
You can also substitute green peppers for aubergine.
