Description
I adapted this from a Jamie Oliver recipe (recipe theft), found the amount of onions he used made the curry harsh

Chop the onion, leak, garlic & chilli Sprinkle with Maldon salt & set aside, heat a couple of tble spoons of oil in a large pan & when hot add the mustard seeds, when these start to pop add the fenugreek & the chopped onions leaks, garlic & chilli, stir round for 3 - 4 minutes to soften, when soft reduce the heat to medium & add the rest of the spices, fry for a couple more minutes & you should have a fairly dry mix that is starting to just catch (well it does for me)as soon as it is at this stage add the passata & simmer for a couple of minutes & then add your coconut milksimmer this now for between 30 & 45 minutes depending on the consistancy & tasing as you go.
Depending on how hot you want it depends on how many chillis & the type of chilli, also the differance of the ginger gives a more fragrent taste using the ground ginger.
This tastes amazing the day after & after freezing, tastes great with chicken fish & vegetables
Slice your chicken, fish or veg into suitable chunks & simmer in the sauce
Enjoy
