Ingredients

1 tbspn oil
to taste salt and pepper
1lb baby new potatos boiled
1½ lbs haddock fillet skinned in 2 inch cubes
to thin to desired consistency water
½ pint milk
½ pint fish stock (optional)
1 veg stock cube
2 tbspns plain flour
1½ tbspns medium curry powder
4 sticks green celery medium sliced
1 large Spanish onion roughly chopped
for garnish parsley chopped

Mildly curried creamy one-bowl meal

Method

Heat oil in large saucepan. Add onion and celery and sweat for 10 mins with lid on. Add curry powder, crumbled stock cube and flour, cook through for 2 minutes. While stirring, add stock (if using), milk and enough water to achieve a creamy consistency.

Add fish and cook over gentle heat until cooked but not falling apart. Add boiled potatoes, warm through and add salt and pepper to taste. Serve in bowls and scatter with chopped parsley.
