Trapiche is situated in the Mendoza region of Argentina. The winery was established in 1883 and they are well known for producing quality wine at affordable prices. This is a great example of Sauvignon Blanc from the Mendoza region. Fresh aromas of grapefruit, crisp blackcurrant leaf, green pepper and grassy back notes. Buy this wine if you like: Dry whites with lively fruit and fragrant aromatics.
Description
I only got this wrong once – I put too much fruit in
and it burst, but it’s so simple anyone can pull it off
with a 99% success rate.
Method
-
1
Preheat the oven to
180°C/160°C fan/gas mark 4
Flour up your surface and roll out your pastry. Cut 24cm circle out
of it and if you want to use a template to get a nice round piece,
I salute you, but raggedy shaped ones taste just as good. Once
you’ve got your shape, large or small, pile the blackberries and
apples in the middle of the pastry, sprinkle with sugar and cinnamon
and egg wash the sides. Lift the pastry around the filling, folding
and sticking as you go. Brush the outside with egg yolk and bake
in the oven for 20 – 25 minutes until golden brown. Serve with
cream and honey. Delicious whether you’re three or eighty-three.
Chef's Tips
It’s good to encourage the
family to experiment with proportions. I always buy
pastry ready-made and keep it in the freezer.
