Accompaniment
SponsoredBaron de Ley Club Privado Reserva Rioja
The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. Lively, ripe, red fruit with dried tobacco and nutty vanilla overtones, round tannins with an expressive woody finish. Rioja wine can be excellent value for money and has terrific cellaring potential. Buy this wine if you like: Well rounded reds, with soft fruit and toasty character, easy drinking for upfront pleasure.
Description
I first saw this dish made by the "Hairy Bikers". Their
recipe used a 50-50 mix of beef & pork mince, personally I find this a bit to heavy,so I just use beef.
Method
-
1
1 Combine mince,chopped onion,garlic,herbs & breadcrumbs
in a large bowl.
2 Season with salt & black pepper & mix thoroughly by hand
3 Shape mixture into about 20 balls.
4 Heat oil in a large frying pan over a medium heat,
then fry meatballs for 5/10 mins, turning occasionally
until browned all over
5 Transfer Meatballs to a large saucepan
6 Reheat oil over a low light, add sliced onions & cook
gently until soft [about 5 mins]
7 Add tomato puree & continue cooking for further 2-3
mins.
8 Sprinkle flour over onion & stir until thoroughly
combined.
9 Slowly stir in wine & stock, stirring until sauce begins
to thicken.
10 Pour gravy over meat balls, bring to boil then reduce
heat to simmer.
11 Cover pan with lid & continue to cook for 30 mins
stirring occasionally.
12 Remove lid from pan & increase heat until sauce thickens, check seasoning & serve
