- 1 Tbsp Plain Flour
- 2 Floz Milk
- 1 Large Egg Yolk
- 25g Butter
- to taste Paprika or Cayenne Pepper
- ½ tsp English Mustard

Mix cheese & flour in a small bowl.
Heat mil then add cheese mix, 1 tbsp at a time, stirring.
When all the cheese has been mixed in, remove from heat.
drop in the mustard, egg yolk & butter. Season and stir well
