This is a really quick and easy version. Served with boiled rice it can be made in advance, so its a good one to serve at a dinner party.
Method
-
1
Slice chicken into strips (cut it on a slant - it cooks quicker)
Put half a can of coconut milk into a wok and add green curry paste
Heat it gently - do not let it boil
Add the chicken
Stir it in and let the chicken absorb the milk
Add the kaffir lime leaves to the wok whole
Add about 10 shakes of the fish sauce and about 1 1/2 - 2 teaspoons of sugar
Taste it and see how much would be best
Mix it all in
Check the chicken is completely cooked
Add the beans and red pepper
Keep on the heat until vegetables are cooked
Serve with boiled rice (remember to remove the lime leaves before serving!!)
They are the leaves of a kind of lime tree that are used to impart a citrus flavour in eastern cooking. You can find them freeze dried in the herbs and spices section of most food stores but they can be expensive. try looking in your local asian food store where they are a lot cheaper and you may even find fresh ones that have a much better flavour. If you chop them thinly there is no need to remove them when the dish is cooked
This might be a stupid question but what are kaffir lime leaves and where can I get them?
