Description
I always hated Christmas Pudding as a child so every Christmas Day my Grandad would come for dinner and bring his chocolate whiskey cake along. It's so yummy I'd like to share it.
Method
-
1
1) Grease a loose bottomed cake tin and line it around the sides with sponge fingers cut in half.
2) Cream together the butter and sugar
3) Separate the eggs and beat the yolks until they are creamy then beat into the butter mixture.
4) Break the chocolate into small pieces and add with a desert spponful of water into a small bowl standing over a pan of boiling water.
5) When the chocolate has melted mix it into the butter mixture and add 5 tbsp of whiskey.
6) Whisk the egg whites til they are stiff then lightly fold them into the mixture.
7) Pour it quickly into the lined tin and chill for several hours (decorate with cadbury's buttons - optional)
8) Push the loose bottom of the tin through the sides of the cake tin and serve the dessert from the base.
9) Althought the dessert has a moussy texture it can still be cut like a cake - hence the name Chocolate Whiskey Cake. Serve with cream.
If you want an alternative recipe with less whiskey use the following ingredient ratios:
1) 1 packet of trifle sponges
2) 1/4lb / 115g caster sugar
3) 1/4lb / 115g butter
4) 3 eggs
5) 1/4 llb / plain chocolate
6) 2 tbsp whiskey
Follow the same recipe method.
I hope you enjoy this as much as I always have!
