1. Dissolve 3 stock cubes in 1 litre of boiling water
2. Add the tin of chopped tomatoes, stir and then put the liquid to one side whilst preparing other ingredients.
3. Fry the onion in melted butter and oil
4. Add the raw chicken to brown (10 mins)
5. Add grilled bacon and full bag of 500g rice and stir to cover all in the oil
6. Add all the liquid and mushrooms and stir.
7. Bring to boil, simmer, cover with lid, but remove regularly to stir β do not let stick to bottom of pan.
8. When all liquid absorbed test a piece of rice to see if soft. Add a little more water if not soft and continue to simmer until mixture is almost dry and rice is soft.
9. Add thawed peas until warmed through, whilst stirring all the time to prevent sticking.
10. Melt through a blob of butter and serve with sprinkle of Parmesan.
Chef's Tips
β’ The tin of chopped tomatoes can be substituted for another stock cube in an additional 600ml of water. Total liquid going in the pan should always equal 1.6litres β whatever liquid you use.
β’ Arborio rice gives the dish a more moist, sticky and chunky texture, whereas Basmati rice gives it a drier, fluffier and less chunky texture.
β’ I tried Arborio rice without tinned tomato and extra stock and Basmati rice with tinned tomatoes and less stock - itβs nice both ways!
