Nederburg Cabernet Sauvignon Rose

Nederburg Cabernet Sauvignon Rose

This beautiful rose wine is made entirely from Cabernet Sauvignon grapes, fruit driven, refreshing with abundance of berry flavours and a pleasant long finish.

Description

My very good friend, Moira, made this dish for me at a fantastic dinner party event that she hosted earlier this year. It is sensational!!

Method

  1. 1

OK so the first thing you need to do is slice your Aubergines long ways so that you get a nice flat shape - and then sprinkle with salt and pepper and pop them in the oven to roast (around 200c) for around 30 mins. Then put the feta cheese, the cream cheese and the cream all in a bowl and season with salt and pepper. (You can add an egg if you want it to be 'firmer' (but Moira didn't and it was delish! We all loved the gooey, creamy texture!)
When the Aubergines have roasted nicely, let them cool for a while and then arrange them in a roasting tin. Pour the cheese mixture over the top to just about cover the aubergines. Chop your tomatoes - I think it looks nicest to cut little Cherries or Pomodorino in half and throw them over the top fairly carelessly. Then sprinkle LOTS of fresh OREGANO.. I haven't tried it yet, but I imagine you coud also sprinkle a few chopped black Olives and this would also be delicious. Pop this in the oven at around 150 degrees and let it bake for around 30 minutes until nice and golden on the top.
